Folklore has it that in 1837 Governor Franklin had no option but to outlaw distilling because the majority of the fledgling colonies grain crops were being distilled rather than processed into food, placing the population on the brink of famine. The prohibition did assist in restoring the colonies food stocks, however did not put an end to the distilling of whisky, which by this time was firmly embedded in the culture of the population. Clandestine stills began operating in the nearby hills on the banks of the many rivulets and creeks that flow from the mountains, not only keeping the population well watered but also ensuring that the whisky making tradition continued in true colonial style. More than a century later after heavy lobbying by local distillers the antiquated law was repealed. This provided the opportunity for local artisans to once again marry their passion, know how and heritage with the pristine environment and produce world class single malt whisky. One such artisan is Patrick Maguire, a fourth generation son of those who arrived in Van Diemens Land as a guest of His Majesty. Today Patrick is at the reins of Tasmania Distillery, Australia’s most awarded distillery, producing world class “Sullivans Cove” Single Malt Whisky, named such as a salute to those early pioneers who forged such a rich heritage.
