Sorelle Casa Fine Wines was started by sisters Ginevra and Olivia Casa, originally from Rome, Italy. The two sisters grew up in Italy and developed a great passion for Prosecco. In August of 2010 the Italian laws regarding the production of Prosecco changed. After decades of being able to blend other grapes with the Prosecco the Italian government decided to make of it a DOCG and now no longer is it possible to have blends. The government now requires Prosecco to be produced with 100% Glera grapes. Being big lovers of the wine they grew up with, when Ginevra and Olivia learned of this new law coming, they decided to keep the tradition of the Italian blend alive, and in early 2009 they created Secco Italian Bubbles.

According to Ginevra, "We are using the noble varietals to increase the flavor and aromatic profiles - blending the Glera and Pinot Bianco for the Secco White and blending Glera and Pinot Noir for the Secco Rose. We want to make the best sparkling wine from my home region, so of these blends, Secco - our Italian Bubbles – was born."
In the late Fall of 2010 the sisters imported into the US and released their inaugural Secco Italian Bubbles. And, to quote the Bobby Darin lyrics, "the crowd went wild."
